ONE of Andalucia's institutions, Fernando Cordoba opened this grand restaurant in 1987. The town has grown a bit since then – in fact at nearly 90,000 it is one of largest towns in Cadiz province – and El Faro is now ringed by a busy dual carriageway.
That said this is still one of the region's best places to eat, in particular for its amazing bodega, with thousands of wines, and now its own huerta at the back, producing organic vegetables all year round. Inside it is sumptuously decorated, and beautifully lit with antique decor, fresh flowers and good attention to detail.
Your chef is one of the most experienced around and now has a sister restaurant (also renowned) in Cadiz old town.
